Bolton’s Spicy Chicken & Fish is a Nashville Institution. Started by the late Bolton Polk the menu is built on a family recipe that’s been passed down through generations. This latest iteration of the Bolton brand was started by the heirs to the family recipe, namesake Bolton Matthews and his wife Dollye Ingram. The younger Bolton received the family recipe from his uncle the elder Bolton shortly before he passed and began cooking up the family’s signature dish in the 90’s. Since then the brand has expanded to a second Nashville location and a successful pop up in Los Angeles. 
 
In the summer of 2021, Bolton Matthews passed after a battle with colon cancer; however the Bolton’s brand and name remains strong and will forever be a part of East Nashville history and the broader American culinary tapestry.
